It is a commonly known fact that the food in Thailand is incomparable, a unique blend of sweet and sour, salt and spice. The best food can often be found being cooked on the streets, but this is no reason why you shouldn’t be able to cook great Th
ai food yourself. All that is needed is an appreciation of the essence of Thailand and a pleasing palate and you should be good to go!
For that reason, every month we are going to be listing one of our favourite Thai recipes for you to try. This month we have the delicious Thai Satay Sauce, perfect for dipping and sharing.
Ingredients:
1 cup unsalted dry roasted peanuts, unsalted; 2 cloves garlic finely chopped; 1/2 tsp. dark soy sauce; 2 tsp. sesame oil; 1 to 2 Tbsp. brown sugar, to taste; 2 to 2.5 Tbsp. fish sauce; 1/2 tsp. tamarind paste; 1/2 tsp. cayenne pepper; 1/3 cup coconut milk; 1/3 cup water
Method:
- Blend all ingredients in a food processor until sauce is smooth. For a runnier peanut sauce, add a little more water or coconut milk.
- Taste adding more fish sauce (or soy sauce) if it is not salty enough, or more cayenne pepper if it is not spicy enough. For a sweeter dip add a little more sugar and to reduce the salt add some lime juice.
- Sprinkle some chopped peanuts over the top and serve warm or at room temperature as a dip with finger foods, or mix it with some noodles for a noodle salad.
- This recipe will serve 4-6 as a dip and will keep in the fridge for up to 2 weeks.
